cheese and potato soup

recipe via mary jane's farm.

chedder and potato soup
saute 1 diced onion in 4T butter
add 1/4 cup flour
1 t dry mustard
1/2 t cayenne
stir for 3 minutes
add 4 cups chicken broth
1 1/2 cups diced carrots
1 1/2 cups diced potatoes
bring to boil
reduce heat and simmer for 30 min
add 2 cups half and half
add 3 cups grated cheese
cook for 5 minutes
add salt to taste
serves 6

note: i added celery to mine, and some garlic, and i used 2 cups chedder and 1 cup pepper jack cheese, then i topped it with bacon bits. served with betty's baking powder biscuits.
 'tis a very yummy and filling soup.

We had the soup for supper this evening. Very good! I used ham instead of bacon and used Asadero cheese because I didn't have any cheddar. Thanks for the recipe!

I was thinking of potato soup yesterday and so wishing my kids liked potatoes. They will not touch them with a 10 foot pole. Total bummer because I love them. I love the composition on your beautiful dinner.
